The theme of lazy cooking continues with occasional splashes of inspiration. Today I made me some avocado egg boat thingies and called it brunch. For those who know me, you’ll know I have a bit of a love affair going on with avocados these days and am tossing them in where ever I get an opportunity. So this recipe seemed like a really, really good idea … and it was.
1 ripe avocado
2 free range eggs
salt, cracked black pepper, a spalsh of chilli flakes
a couple slices free range, nitrate free bacon
Slice the avocado in half and remove the pit
Remove a little of the flesh, reserve it cuz you can grill that too
Crack an egg into each avocado shell
Grill for about 10 minutes depending how you like your eggs
While you are waiting, fry up your bacon and make yourself a cup of java.
Plate it up, munch it up, call it a brunch well done.
